Oatmeal Muffin Recipe

 Today I made oatmeal muffins- I used a recipe I've had for years and I also have different variations of it that I might post in the future. I've tried these muffins with a lot of alternative ingredients to I also have a vegan and gluten free version, but it's really easy to change out certain ingredients in this recipe without compromising the taste of the final product. Anyways- the recipe:

Ingredients:

  • 2 cups flour (oat-flour, and almond flour work great too, I often use oat-flour)
  • 1/3 cup packed brown sugar
  • 1/3 cup granulated white sugar 
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt 
  • 1/2 cup butter (one stick of butter- it's the same thing) 
  • 1 teaspoon pure vanilla extract 
  • 2 eggs (or a vegan egg alternative) 
  • 1/3 cup milk of choice (I used almond milk)
  • Chocolate chips, walnuts, pecan, or raisins (Really whatever you want to put in the muffins works- just personalize it however you like) 
 Instructions: 
  1. Pre-heat oven to 400 degrees Fahrenheit and add cupcake lines to a cupcake/muffin pan (This recipe makes 12 normal sized muffins)
  2. In a large bowl whisk salt, baking powder, both types of sugar and flour. Since I used oat-flour you can make your own oat-flour by blending oats until it's a fine powder
  3. In a microwave safe bowl belt the butter and mix the vanilla once the butter has belted
  4. Add the butter, vanilla mixture to the dry mix
  5. Add one egg then mix
  6. Add the milk and the other egg and mix until it reaches a well combine consistency 
  7. Add whichever "filling" you want at the end; I used pecans and walnuts
  8. Transfer all the batter into the cupcake pan and make for 20-25 minutes (If you used a different type of flour baking time may vary) 
  9. Once they've baked all the way through (you can check with a toothpick as you would with a normal cake) let them cool completely for best results. And that's it!!

So I make these muffins every week and they're a great breakfast option. I've been using this recipe forever so- try it.  :)
