Hi!! So today I made these cinnamon roll inspired sugar cookies with cream cheese frosting, so the recipe for both will be here. They came out great, but they did take a while to get them perfect. You should definitely try them out though- so here's the recipe.
Ingredients: Cookies
- 3 Cups flour
- 3 Teaspoons baking powder
- 2 Teaspoons cinnamon
- 1/2 Teaspoon salt
- 1 Cup softened butter
- 1 Cup granulated sugar
- 2 eggs
- 1 Tablespoons pure vanilla extract
Ingredients: Frosting
- 8 oz Whipped cream cheese
- 2 Teaspoons pure vanilla extract
- 3/4 Cup butter
- 2 1/2 Cup powdered sugar
- 1 Tablespoon cinnamon
- Whisk together flour, salt, cinnamon and baking powder in a large bowl.
- In a separate bowl blend together the butter and sugar with a hand mixer, until well combined
- Into the butter mixture, add two eggs and the vanilla extract
- To the butter mixture, add the flour mixture- slowly- 1/2 cup at a time until all of the flour mixture is fully incorporated and has created the dough
- Let the dough chill for 30 minutes- while it's in the fridge pre-heat the oven to 375 degrees Fahrenheit
- While you're waiting for the dough to chill you can start to make the frosting- combine the softened butter, cream cheese, vanilla extract, cinnamon and powdered sugar with a hand mixer until it becomes a frosting- like consistency
- Transfer the frosting into a bag prepared for frosting the cookies
- Once the dough has chilled, butter a cookie pan an separate the dough into 1" balls and flatten them with a flat surface until it's about 1/2 an inch on the pan. Repeat this until all the dough is used
- Bake them for 8-13 minutes or until the edges begin to turn a golden brown
- Let the cookies cool completely and you can decorate using the frosting and sprinkle them with ground cinnamon once you're done
So- that's it. I had limited materials today but was still able to make these great cookies. They did take a while but they're really good and definitely worth it. I hope you try this recipe out for yourself. :)
